Tuna, caper and lettuce open sandwich
Tuna, canned in springwater, drained
2 individual, trimmed, thinly sliced
½ individual, stalk, trimmed, thinly sliced
Baby capers, rinsed, drained
1 tsp, finely chopped
Fresh flat-leaf parsley
2 tsp, chopped
¼ small, thinly sliced
Soy and linseed bread
42 g, (1 thick slice)
- Combine tuna, shallots, celery, capers, parsley and lemon juice in a medium bowl.
- Top the bread with avocado, lettuce and tuna mixture. Serve.
