Tropical fruit with passionfruit sauce

Tropical fruits, lime zest, honey and yoghurt- the perfect refreshment for those hot summer days!

Ingredients

passionfruit(s)

cup(s), pulp (80ml)

lime juice

1 tbs

honey

1 tsp

mango

1 medium, thinly sliced

pineapple

150 g, thinly sliced

kiwifruit

1 medium, thinly sliced

99% fat-free plain yoghurt

½ cup(s), (120g)

lime zest

1 tsp

Instructions

  1. Place passionfruit, juice and honey in a small saucepan over medium-high heat and bring to the boil. Reduce heat and simmer, uncovered, for 2 minutes or until slightly thickened. Set syrup aside to cool.
  2. Meanwhile, layer mango, pineapple and kiwifruit in 2 serving glasses. Pour over cooled syrup. Serve topped with yoghurt and sprinkled with lime zest.

Notes

VARIATION: Swap honey for maple syrup.
