Tomato and carrot soup

1 individual, trimmed, chopped

- Spray a large saucepan with oil and heat over medium-high heat. Add onion, carrot and celery and cook, stirring, for 5 minutes or until vegetables have softened. Add garlic and cook, stirring, for 30 seconds or until fragrant.
- Add tomatoes and 2 cups (500ml) water and bring to the boil. Reduce heat to low and simmer for 20 minutes.
- Using a stick blender or food processor, process soup until smooth. Return soup to low heat. Stir until heated through. Season with salt and freshly ground black pepper to serve.
TIP: This soup is suitable to freeze. Make double the recipe and ladle cooled soup into individual portion-sized airtight containers, leaving a 1–2cm gap at the top for expansion. Label, date and freeze for up to 2 months. Thaw in the fridge overnight before reheating in the microwave or a saucepan.
