Lime juice
½ tsp
Fresh coriander
1 tsp, chopped, plus extra to serve
Potato(es)
150 g, cut into thin fries
Seasoning

To make the ‘mayo’, process tofu, lime juice and 1 teaspoon coriander in a mini food processor until combined. Season to taste with salt and pepper. Transfer to a small serving bowl and sprinkle over the extra coriander. Set aside in the fridge.
