Thai-spiced tofu fries with vegan ‘mayo’

Spicy fries served with a brilliantly simple lime and coriander ‘mayo’ for dipping.

Ingredients

Silken tofu

50 g

Lime juice

½ tsp

Fresh coriander

1 tsp, chopped, plus extra to serve

Potato(es)

150 g, cut into thin fries

Seasoning

1 tsp, Thai 7 spice (or any Asian seasoning mix)

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 190°C. Line a shallow sided baking tray with baking paper.
  2. To make the ‘mayo’, process tofu, lime juice and 1 teaspoon coriander in a mini food processor until combined. Season to taste with salt and pepper. Transfer to a small serving bowl and sprinkle over the extra coriander. Set aside in the fridge.
  3. Arrange tofu fries on prepared baking tray and lightly spray with oil. Sprinkle over the seasoning mix and ¼ teaspoon salt. Gently toss to coat. Bake tofu fries, shaking the tray every now and then, for 12-15 minutes, until golden. Serve with 'mayo' on the side.

Notes

This vegan ‘mayo’ keeps in an airtight container in the fridge for the same time as the use-by date of the tofu. Increase the quantities to make a bigger batch and use it in vegan salads, sandwiches and baked potato fillings.
