This amazingly easy Asian soup comes topped with crunchy sprouts, tender chicken and fresh herbs.

Ingredients

Chicken stock

1½ cup(s), (375ml)

Green curry paste

1 tsp

Lime juice

1 tbs

Dry rice noodles

100 g, (thick)

Cooked skinless chicken breast

200 g, thinly sliced

Choy sum

½ bunch(es), coarsely chopped

Bean sprouts

¾ cup(s)

Fresh coriander

cup(s)

Instructions

  1. Bring stock and 1½ cups (375ml) water to the boil in a medium saucepan. Add curry paste and juice, stirring to combine.
  2. Add noodles and boil for 1 minute. Add chicken and choy sum and cook for 2–3 minutes. Divide soup into serving bowls, top with sprouts and coriander, then serve.

Notes

TIP: To make at work, add stock, juice, curry paste and noodles to boiling water in a microwave-safe bowl. Microwave on high (100%) for 2 minutes. Add chicken and choy sum, microwaving for 2 more minutes. Serve as above.
