Stir-fried beef with mango
Brown basmati rice
200 g, (1 cup)
Lean beef sirloin steak
320 g, (Buy 400g) fat trimmed, cut into strips
2 clove(s), finely chopped
1 tbs, (4cm piece) finely grated
Sugar snap peas
Fresh red chilli
1 whole, deseeded, finely chopped
3 individual, thinly sliced
1 medium, cut into thin wedges
2 tbs, (sprigs) chopped
- Cook rice following packet instructions. Drain.
- Meanwhile, combine steak, soy, garlic and ginger in a bowl. Toss to coat. Heat a wok over high heat. Add oil and heat for 20 seconds. Stir-fry beef, in batches, for 1 minute or until browned. Transfer to a plate.
- Add sugar snap peas and 1½ tablespoons water to wok and stir-fry for 1 minute or until just tender. Add chilli and shallots and stir-fry for 1 minute. Add steak and mango and stir-fry for 1 minute or until heated through.
- Sprinkle stir-fry with coriander and serve with rice.
