Ingredients

Brown basmati rice

200 g, (1 cup)

Beef sirloin steak, raw

320 g, (Buy 400g) fat trimmed, cut into strips

Soy sauce

1 tbs

Garlic

2 clove(s), finely chopped

Fresh ginger

1 tbs, (4cm piece) finely grated

Sesame oil

2 tsp

Sugar snap peas

200 g

Fresh red chilli

1 whole, deseeded, finely chopped

Green shallot(s)

3 individual, thinly sliced

Mango

1 medium, cut into thin wedges

Fresh coriander

2 tbs, (sprigs) chopped

Instructions

  1. Cook rice following packet instructions. Drain.
  2. Meanwhile, combine steak, soy, garlic and ginger in a bowl. Toss to coat. Heat a wok over high heat. Add oil and heat for 20 seconds. Stir-fry beef, in batches, for 1 minute or until browned. Transfer to a plate.
  3. Add sugar snap peas and 1½ tablespoons water to wok and stir-fry for 1 minute or until just tender. Add chilli and shallots and stir-fry for 1 minute. Add steak and mango and stir-fry for 1 minute or until heated through.
  4. Sprinkle stir-fry with coriander and serve with rice.

Notes

TIPS: To make this recipe gluten-free, use gluten-free soy sauce. Add 1½ tbs fried shallots with coriander in Step 4. Swap beef for 450g skinless chicken breasts.
