Spring vegetables and egg sunny-side up
5 spear(s), trimmed, spears, thinly sliced lengthways
1 medium, thinly sliced lengthways
1 individual, quartered, stem thinly sliced
Fresh lemon rind
½ tsp, finely grated
- Place asparagus, carrot, onion and rind in a microwave steamer with 1 tablespoon water. Season with salt and pepper. Close steamer and microwave on High (100%) for 4 minutes.
- Crack egg into a microwave egg poacher and microwave on High (100%) for 1 minute or until egg white is set and yolk is still runny. Serve vegetables topped with egg.
SERVING SUGGESTION: Add 1 teaspoon dukkah sprinkled over egg to serve. TIPS: Swap asparagus for snow peas.
