Spinach, feta and walnut stuffing

Need a stuffing for your roast chicken or turkey? Try this spinach, feta and toasted walnut for two great reasons. It’s super easy to make and it’s super tasty.


Ingredients
Olive oil
2 tsp
Brown onion
1 small, finely chopped
Garlic
2 clove(s), crushed
Baby spinach
125 g
Lemon juice
2 tbs
Dried breadcrumbs
1¾ cup(s), sourdough
Walnuts
¼ cup(s), lightly toasted
Reduced fat feta cheese
100 g
Instructions

Heat oil in a large non-stick frying pan over medium heat. Cook onion and garlic, stirring, for 5 minutes or until softened.

Add spinach and lemon juice and cook, stirring, for 2 minutes or until spinach wilts. Stir in breadcrumbs and walnuts. Cool for 5 minutes.

Stir in feta. Season with salt and pepper. Refrigerate until required.
