Spinach egg wraps

An easy, quick, and inexpensive alternative to flour-based wraps that won't cost you as many Points!

Ingredients

Baby spinach

1 cup(s)

Egg(s)

2 large

Garlic powder or flakes

tsp

Onion powder

1 tsp

Oil spray

1 x 3 second spray(s)

Instructions

  1. Process spinach, eggs, garlic powder, onion powder, and pinch of salt in a blender until completely smooth.
  2. Lightly spray a medium nonstick frying pan with oil and heat over medium heat for 3 minutes. Pour in half the egg mixture. Gently tilt the pan to swirl the egg, forming a thin, even layer. Cook for 1-2 minutes, until edges are cooked and wrap easily releases from the pan. Using a thin spatula, carefully turn the wrap over and cook on the other side for a further 1-2 minutes, until bottom is golden brown. Transfer to a cutting board to cool.
  3. Repeat with remaining egg mixture, lightly spraying with more oil in between. Once cooled, use wraps immediately, or to store, wrap in baking paper and place in a resealable bag and refrigerate for up to 3 days.

Notes

Feel free to fill with your favourite sandwich toppers (we're partial to chicken and cheese but deli salads would be great, too).
