This recipe is a taste sensation —just stir together some key store-bought sauces for a dinner that stands up to anything you’d order in or eat out.

Ingredients

Hoisin sauce

2 tbs

Sriracha sauce

1½ tbs

Soy sauce

1 tbs

Sunflower oil

2 tsp

Fresh ginger

2 tsp, finely grated

Lean pork mince

250 g

Red capsicum

2 medium, cut into 1cm pieces

Lebanese cucumber

1 medium, cut into 1cm pieces

Green shallot(s)

2 individual, thinly sliced

Butter lettuce

20 g, (12 individual leaves)

Instructions

  1. Combine hoisin, sriracha and soy sauce in a small bowl and set aside.
  2. Heat oil in large wok over high heat. Stir-fry ginger for 10 seconds, until fragrant. Add pork, stir-frying for 2-3 minutes to break up mince and brown evenly. Add capsicum, stir-fry until combined, then add reserved sauce mixture and continue stir-frying for a further 1-2 minutes until pork is cooked and mixture is well combined.
  3. Remove from heat, stir in cucumber and shallots. Spoon into lettuce leaves to serve.

Notes

TIP: Swap in crunchy iceberg lettuce for butter lettuce if you prefer. Store any leftover ginger in the freezer, and when you’re ready to use it, grate it frozen. There’s no need to peel and it’s easier to grate than when it’s fresh.
