Spicy pineapple and mint julep mocktail

Add some extra spice to this tropical Saxbys Ginger Beer inspired mocktail with a little fresh ginger and peppercorns. Unexpected yes, but an amazing combination with sweet pineapple and fresh mint.

500 g, (1/2 a pineapple) peeled, cored, finely chopped
Diet fruit-flavoured soft drink
660 ml, pineapple
- Grate ginger and squeeze flesh to extract 1 tsp juice. Place juice, mint leaves, peppercorns and half the pineapple in a large plastic jug. Using a rolling pin, crush pineapple mixture to combine flavours.
- Divide crushed mixture between 4 glasses. Add crushed ice and remaining pineapple. Pour over diet pineapple. Serve with extra mint sprigs.
