Ingredients

Avocado

¼ medium, sliced

Whole grain wrap

45 g, (1 x 45g)

Baby spinach

30 g

Lebanese cucumber

½ small, sliced

Boiled egg(s)

1 medium, hard, sliced

Fresh chives

2 tsp, chopped

Chilli sauce

1 tsp, Sriracha variety

Instructions

  1. Place avocado slices down middle of tortilla. Top with spinach, cucumber and egg. Sprinkle with chives. Season with salt and pepper. Wrap to enclose filling. Serve with sauce.

Notes

TIPS: Sriracha chilli sauce is a hot chilli sauce available in the Asian section of most supermarkets. You could also use a pinch of cayenne pepper or tabasco sauce to taste. To transport to work, roll up wraps then cover firmly in foil and refrigerate until ready to serve. VARIATION: Add ¼ red capsicum (thinly sliced). Swap avocado with 2 tbs reduced-fat cottage cheese (contains dairy).
