A warm bowl of porridge laced with cinnamon, cardamom and fresh dates will provide a sweet start to your day

Ingredients

Rolled oats, dry

cup(s), (30g)

Fresh dates

2 individual, pitted, coarsely chopped

Skim milk

¼ cup(s), (60ml)

Ground cinnamon

¼ tsp, (pinch)

Cardamom

¼ tsp, ground, (pinch)

Apricot, canned in natural juice, drained

135 g

Ground LSA seed mix (linseed, sunflower, almond)

1 tsp

Brown sugar

¼ tsp

Instructions

  1. Place oats and dates in a small saucepan. Add milk, cinnamon, cardamom and 1⁄3 cup (80ml) water. Bring to the boil. Reduce heat to low and simmer, stirring, for 3–4 minutes or until cooked and thickened.
  2. Serve porridge topped with apricots, LSA and brown sugar.

Notes

LSA mix is a mixture of ground linseeds, sunflower seeds and almonds. It is available in the health-food section of most supermarkets or from health-food stores. It has a short shelf-life once opened so only buy small quantities and store it in an airtight container in the fridge.
