Ingredients
Tomato paste
¼ cup(s), (65g)
Dried herbs
2 tsp
Wholemeal wrap
120 g, (4 x 40g wraps)
Red capsicum
1 medium, cut into thin strips
Yellow capsicum
1 medium, cut into thin strips
Mushrooms
120 g, thinly sliced
Green shallot(s)
4 individual, thinly sliced
Light mozzarella cheese
1 cup(s), grated, (120g), grated
Grated parmesan cheese
½ cup(s), (40g)
Instructions

Preheat oven to 200°C. Line 2 baking trays with baking paper.

To make a pizza sauce, mix tomato paste and dried herbs with 1 tablespoon water, then season with salt and pepper.

Place wraps on prepared trays and spread evenly with sauce. Top with capsicums, mushrooms and shallots. Sprinkle over mozzarella and bake for 10-15 minutes, until cheese has melted and edge of wrap is crispy. Remove from oven and transfer to serving plates. Sprinkle over parmesan. Cut each pizza into quarters to serve.
