Spaghetti all'Amatriciana

Mix up a classic tomato pasta using tuna, bacon, and chilli.

Ingredients

Olive oil

1 tbs

Red onion

1 medium, thinly sliced

Shortcut bacon

125 g, finely chopped

Garlic

2 clove(s), crushed

Dried chilli flakes

½ tsp

Canned diced tomatoes

400 g

Tuna, canned in springwater, drained

135 g, (185g can)

Dry pasta

300 g, (thin spaghetti)

Shaved parmesan cheese

¼ cup(s)

Instructions

  1. Heat oil in a deep non-stick frying pan over medium-high heat. Add onion and bacon and cook, stirring, for 5 minutes or until onion is softened. Add garlic and chilli and cook, stirring, for 30 seconds or until fragrant. Add tomatoes and ½ cup (125ml) cold water and bring to the boil. Reduce heat to low and simmer, uncovered, for 5 minutes or until sauce is thickened slightly. Stir in tuna.
  2. Meanwhile, cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Return pasta to pan. Add tuna sauce to pasta and toss to combine. Serve pasta sprinkled with parmesan.

Notes

You can use pasta shapes instead of spaghetti and 1 small fresh red chilli (deseeded, finely chopped) instead of dried chilli.
