Sourdough with peanut butter and banana berry salad

If you loved peanut butter and jam sandwiches as a kid, you’ll adore this gourmet adult version with fresh fruit and crunchy wholemeal toast

Ingredients

Banana(s)

1 medium, sliced

Fresh strawberries

100 g, hulled, halved

Fresh raspberries

cup(s)

Fresh blueberries

¼ cup(s)

Honey

2 tsp

White sourdough bread

60 g, (2 slices) wholemeal

Light peanut butter

2 tbs

Instructions

  1. Combine banana, strawberries, raspberries and blueberries in a medium bowl and drizzle with honey. Toss gently to combine. Set aside for 5 minutes.
  2. Meanwhile, grill or toast bread on both sides until lightly browned. Spread toast with peanut butter and serve topped with banana berry salad.

Notes

TIP: Honey is easier to measure and drizzle if you warm it in a microwave-safe container on High (100%) for a few seconds. Alternatively, heat the measuring spoon in hot water first.
