Packed with colour, sweetness and flavour, this salad is ideal for a quick mid-week meal or being a part of a summer BBQ dinner.


Ingredients
99% fat-free, plain Greek yoghurt, unsweetened
1 tbs
Whole grain mustard
1 tsp
Cos lettuce
1 cup(s), (4 leaves), coarsely torn
Smoked skinless 97% fat-free chicken breast
80 g, thinly sliced
Nectarine(s)
1 medium, cut into thin wedges
White radish
1 individual, small, thinly sliced
Celery
½ stick(s), nly sliced
Celery
4 stick(s), (4 pale leaves without stick)
Walnuts
15 g, coarsely chopped
Instructions

Combine the yoghurt, mustard and 2 teaspoons of water in a small bowl. Season with salt and pepper.

Arrange the lettuce, chicken, nectarine, radish and celery in a serving bowl. Sprinkle with the celery leaves and walnut, and drizzle with the dressing.
