Ingredients

Canned black beans, rinsed, drained

2 can(s), 400g size can, (2 x 400g cans)

Canned cannellini beans, rinsed, drained

2 can(s), (2 x 400g cans)

Pinto beans, no added salt, canned, drained

2 can(s), (2 x 400g cans)

Canned diced tomatoes

2 can(s), (2 x 400g cans)

Dried chilli flakes

1 tsp

Tomato puree

1 can(s), (1 x 410g can)

Brown onion

1 large, finely chopped

Garlic

2 clove(s), crushed

Chilli seasoning mix

35 g, gluten-free variety

Frozen corn kernels

420 g, thawed

Fresh coriander

½ cup(s), chopped

Lime juice

1 tbs, to taste

Instructions

  1. Combine black beans, cannellini beans, pinto beans, diced tomato, chilli flakes, tomato puree, onion, garlic and seasoning mix in a 4.5 litre (18-cup) slow cooker. Cook, covered, on high for 2 hours (or low for 6 hours).
  2. Stir in corn and cook, covered, for 30 minutes. Stir in coriander and lime juice to taste, to serve.

Notes

SERVING SUGGESTION: Serve chilli topped with diced fresh red onion, red capsicum and sliced long fresh green chillies.
