Ingredients

Canned diced tomatoes

2 400g can, (2 x 400g can)

Tomato paste

cup(s), (90g)

Balsamic vinegar

2 tbs

Dried oregano

3 tsp

Dried chilli flakes

¼ tsp

Turkey breast mince

1000 g, (1kg) (see tip)

Panko breadcrumbs

½ cup(s), (70g)

Dried basil

2 tbs

Fennel seeds

1 tsp, crushed

Instructions

  1. Combine canned tomatoes, tomato paste, vinegar, 2 teaspoons oregano and chilli flakes in a 4.5 litre (18-cup) slow cooker. Season with salt and pepper.
  2. Combine mince, breadcrumbs, basil, fennel seeds and remaining oregano in a medium bowl. Season with salt and pepper. Shape mixture into 24 meatballs. Add to slow cooker. Cook, covered, on low for 6 hours or until meatballs are cooked through.

Notes

Of course, you can serve these over pasta, but you can also try zucchini noodles if you want more vegies. Ask your butcher to make turkey breast mince for you or process chopped turkey breast steaks until minced. Do not over process or it will turn to paste.
