Slow-cooker Marrakesh-style pork
Lean pork leg steak
450 g, (buy 500g), fat trimmed
1 large, quartered, thinly sliced
12 whole, thinly sliced
Apple juice no added sugar
¾ cup(s), (180ml)
2 tsp, finely grated
1½ tsp, chopped
¼ cup(s), or basil
1 medium, quartered
- Heat oil in large non-stick frying pan over medium-high heat. Season pork with salt and pepper. Cook pork for 2 minutes each side or until golden. Transfer to a plate.
- Reduce heat to medium. Cook onion, stirring, for 8 minutes or until golden. Combine half of both the onion and apricots in a 4.5 litre (18-cup) slow cooker. Top with pork and pour over apple juice. Combine remaining onion, apricots, ginger and thyme in medium bowl. Spoon over pork and tuck in cinnamon stick.
- Cook, covered, on high for 3 hours (or low for 8 hours) or until pork is fork tender. Remove and discard cinnamon. Sprinkle with coriander and serve with lime wedges.
