Place the pan on the table and make this Spanish specialty a self-serve dish.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Red capsicum

1 medium, coarsely chopped

Garlic

2 clove(s), crushed

Ground paprika

1 tsp, mild

Canned diced tomatoes

400 g

Vegetable stock

4 cup(s), (1L)

Rice, white, dry

1½ cup(s), medium grain

Green string beans

200 g

Seafood marinara mix

400 g

Fresh flat-leaf parsley

¼ cup(s)

Fresh lemon rind

2 tsp, finely grated

Instructions

  1. Heat oil in a deep non-stick frying pan over medium heat. Add onion and capsicum and cook, stirring, for 5 minutes or until softened. Add garlic and paprika and cook, stirring, for 1 minute.
  2. Add tomatoes and stock and bring to the boil. Stir in rice and return to the boil. Reduce heat to low and simmer, uncovered, stirring occasionally, for 18 minutes. Add beans and seafood and simmer, covered, for 8–10 minutes or until liquid is absorbed and rice is tender.
  3. Stir in parsley and rind. Serve paella with lemon wedges.
