Ingredients

Shortcut bacon

90 g, (4 x 25g slices), fat trimmed

Maple syrup

2 tsp

Egg(s)

1 medium

Ground cinnamon

½ tsp

Wholemeal bread

2 slice(s), (2 x 35g slices)

Brown sugar

1 tsp

Banana(s)

1 medium, halved lengthways

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat barbecue on medium to high heat.
  2. Brush bacon with maple syrup and cook for 2-4 minutes on each side, until crispy.
  3. Meanwhile, whisk egg, cinnamon and 1 tablespoon water in a shallow bowl. Dip bread into egg mixture and allow to soak for 30 seconds. Lightly spray barbecue flat plate with oil and heat over medium heat. Transfer bread to barbecue and cook for 2 minutes. Flip and cook for a further 2 minutes or until golden. Transfer to serving plate.
  4. Sprinkle sugar over cut side of banana. Cook banana, cut-side down, for 1-2 minutes or until sugar caramelises. Turn and cook for 1 minute or until heated through.Top French toast with bacon and caramelised banana. Serve.
