Seafood and cannellini bean stew

This super simple seafood stew is a great mid-week winter warmer.


Ingredients
Olive oil
1 tbs
Brown onion
1 small, finely chopped
Celery
2 stick(s), thinly sliced
Zucchini
2 medium, cut into 1cm pieces
Garlic
1 clove(s), crushed
Canned diced tomatoes
400 g, (1 x 400g can)
Seafood marinara mix
400 g
Raw peeled prawns
200 g, peeled, tails intact
Canned cannellini beans
1 400g can, (1 x 400g can)
Lemon juice
1 tbs
Fresh basil
¼ cup(s), chopped
Instructions

Heat oil in a large saucepan over medium-high heat. Cook onion and celery, stirring, for 3-4 minutes or until softened. Add zucchini and garlic. Cook, stirring, for 2 minutes. Add tomatoes and ½ cup (125ml) water and bring to the boil. Reduce heat. Simmer for 5 minutes.

Add marinara mix, prawns and beans and simmer, covered, for 5 minutes or until seafood is just cooked through. Stir in lemon juice. Season with salt and pepper. Sprinkle with basil to serve.
