Sarah’s chicken and asparagus quiche cup

White self-raising flour
1 individual, thinly sliced
Grated parmesan cheese
Cooked skinless chicken breast
Canned asparagus, drained
- Combine egg and flour in small bowl. Season with salt and pepper and whisk with a fork to form a smooth batter. Stir in shallots, parmesan, chicken and asparagus.
- Spoon mixture into a 200ml-capacity microwave-safe mug. Microwave on High (100%) for 2 minutes or until set. Stand 2 minutes before serving.
