- Preheat oven to 200ºC. Line 2 large baking trays with baking paper.
- Spread pumpkin on prepared trays and lightly spray with oil. Bake for 30-35 minutes, swapping trays halfway through cooking, or until pumpkin is golden and tender.
Recipe makes 10 cups of roasted pumpkin. You can use any type of pumpkin. We chose butternut pumpkin as it has a medium water content, making it ideal for soups and salads. Cool completely, then store in an airtight container in the fridge for up to 3 days. Add it: 2 tsp ground cumin sprinkled over pumpkin before baking in Step 2. Swap it: Pumpkin for parsnip.
