Wholemeal pita bread
80 g, (2x40g pockets)
Reduced-fat hummus
90 g
Garlic
2 clove(s), crushed
Red wine vinegar
3 tsp
Olive oil
3 tsp
Dried chilli flakes
1 tsp
Fresh flat-leaf parsley
1 cup(s), finely chopped
Fresh coriander
1 cup(s), finely chopped
Snow pea sprouts
50 g
Red onion
½ small, thinly sliced
Cherry tomatoes
5 individual, quartered
Deli-sliced roast beef

Instructions

Cut pita bread in half and carefully separate pockets. Divide hummus between each pocket.

Combine garlic, vinegar, oil, chilli flakes, parsley and coriander in a small bowl. Season with salt and pepper

Combine pea sprouts, onion, tomatoes, roast beef and 1½ tablespoons herb mixture in a medium bowl. Season with salt and pepper. Fill pitas with beef and salad to serve.
