Mix up the classic caesar with a sprinkle of ricotta.

Ingredients

Cos lettuce

360 g, (2x180g, baby)

Lebanese cucumber

2 medium, halved, thickly sliced

Snow peas

100 g, thinly sliced

Green shallot(s)

2 individual, thinly sliced

Always Fresh Grissini, Three Seed and Sea Salt

84 g, broken into bite sized pieces

Low-fat ricotta cheese

300 g, crumbled

Salted anchovies in oil, drained

45 g, cut into thin strips

Extra light sour cream

¼ cup(s), (60g)

Vinegar

2 tbs, (white wine)

Olive oil

2 tsp

Garlic

½ clove(s), crushed

Instructions

  1. Cut the lettuce into wedges and arrange on serving plates. Top with cucumber, snow peas and shallots. Break the breadsticks into bite size pieces and sprinkle over salad then top with ricotta and anchovies.
  2. In a small bowl, combine sour cream, vinegar, oil and garlic. Season with freshly ground black pepper, then drizzle over salad. Serve immediately.

Notes

SERVING SUGGESTION: Cherry tomato salad.
