Rebecca's microwave mushroom pizza

White self-raising flour

- Combine flour, a pinch of salt and 1 tablespoon water in a small bowl to form a dough. If the dough needs a bit more water to bring it together, add 1 teaspoon water at a time to form a dough. Place dough on a kitchen bench and knead until smooth. Roll out dough in between 2 pieces of baking paper to a 5mm thick pizza base. Transfer to a microwave-safe plate. Using a fork, poke a few holes in pizza base.
- Spread tomato paste evenly over pizza base and sprinkle with herbs. Microwave on High (100%) for 45 seconds.
- Sprinkle half the cheese over pizza base. Add mushrooms, then top with remaining cheese. Microwave on High (100%) for 30 seconds. Serve immediately.
You can swap out the mushroom and add your favourite toppings.
