Raw zucchini pasta with avocado pesto

Ingredients
Zucchini
2 large
Avocado
¼ medium
Basil pesto
1 tbs
Lemon juice
1 tbs
Cherry tomatoes
100 g, quartered
97% fat-free cottage cheese
½ cup(s), (125g)
Instructions

Using a julienne peeler or spiraliser, slice zucchini into spaghetti-like strips.

Combine avocado, pesto and juice in a medium bowl until smooth. Add zucchini strips and tomato and toss to combine. Top with cottage cheese and season with salt and pepper.
