- Using a julienne peeler or spiraliser, slice zucchini into spaghetti-like strips.
- Combine avocado, pesto and juice in a medium bowl until smooth. Add zucchini strips and tomato and toss to combine. Top with cottage cheese and season with salt and pepper.
SERVING SUGGESTION: Baby spinach leaves, wholegrain bread(contain gluten) and lemon wedges.
