Looking for a quick and dessert everyone will love? These bite-sized meringues fit the bill!

Ingredients

Light cream cheese

60 g

Icing sugar

1 tsp

Lime zest

1 tsp, grated

Meringue

46 g, vanilla, (20 mini)

Berry jam

1 tbs, (raspberry)

Instructions

  1. Place cream cheese in a small bowl and stir through the icing sugar and zest.
  2. Spread a thin layer of jam on each flat side of the mini meringues. Place 1 tsp of cream cheese mixture on flat side of meringue, sandwich together with another meringue. Serve immediately.
