Raspberry and mint caprioska

Summer just isn't summer without sipping this refreshing fruity cocktail.


Ingredients
Frozen raspberries
1½ cup(s), (170g)
Caster sugar
2 tbs
Lime juice
¼ cup(s), (60ml)
Rum
¾ cup(s), (185ml)
Soda water
3 cup(s), (750ml)
Fresh mint
¼ cup(s), (20 leaves), to serve
Fresh raspberries
¼ cup(s), to serve
Instructions

Place the frozen raspberries, sugar and lime juice in a large jug. Using the end of a rolling pin, muddle the mixture until the raspberries are slightly crushed. Add the rum and stir until well combined.

To serve, divide the ice between serving glasses. Pour over the caipiroska mixture and soda water. Top with mint leaves and fresh raspberries.
