Smoky chorizo and seafood were made for each other in this delightful marriage of Spanish flavours.


Ingredients
Olive oil
1 tbs
Brown onion
1 medium, finely chopped
Red capsicum
2 medium, thinly sliced
Chorizo sausage
120 g, diced
Ground paprika
2 tsp, mild
Dried chilli flakes
¼ tsp, dried
Seafood marinara mix
600 g
Canned diced tomatoes
400 g
Black olives, drained
⅓ cup(s), (50g), with green olive mix, split
Fresh flat-leaf parsley
¼ cup(s), torn
Instructions

Heat oil in a deep non-stick frying pan over medium-high heat. Cook onion, capsicum and chorizo, stirring, for 2 minutes or until onion has softened. Add paprika, chilli flakes and seafood and cook, stirring, for 1 minute or until paprika is fragrant.

Add tomatoes and ½ cup (125ml) water and bring to the boil. Cook for 5 minutes or until seafood is cooked through. Serve seafood stew topped with olives and parsley.
