Prawn, zucchini, goat's cheese and pesto pizza

Ingredients
Wholemeal pita bread
4 large, (4 x 70g)
Basil pesto
2 tbs, (40g)
Zucchini
2 small, thinly sliced
Red onion
1 small, thinly sliced
Cherry tomatoes
250 g, halved
Raw peeled prawns
300 g
Soft goat's cheese
80 g, crumbled
Fresh flat-leaf parsley
2 tbs, chopped
Rocket
75 g, baby, to serve
Instructions

Preheat oven to 200°C or 180°C fan-forced. Line 2 large baking trays with baking paper.

Place pita breads on prepared trays. Spread evenly with pesto. Top with zucchini, onion, tomatoes, prawns, parsley and cheese.

Bake for 10 minutes or until golden and crisp. Sprinkle with freshly ground black pepper and serve topped with rocket.
