Prawn tacos with apple slaw

Crunch into these juicy prawn tacos filled with a refreshing crispy apple slaw. Perfect for summer nights and only takes 25 minutes to make.


Ingredients
Multigrain tortilla
8 regular, (8 x 40g)
Olive oil
2 tsp
99% fat-free, plain Greek yoghurt, unsweetened
½ cup(s), (140g)
Green apple, unpeeled
1 medium, cored, cut into matchsticks
Celery
2 stick(s), thinly sliced
White radish
4 individual, trimmed, cut into matchsticks
Fresh mint
½ cup(s), finely shredded
Raw peeled prawns
300 g
Reduced-salt taco seasoning mix
1 tbs
Instructions

Combine apple, celery, radishes and mint in a bowl. Add half the yoghurt. Combine and set aside.

Combine green prawns and taco seasoning in a bowl. Heat olive oil in a non-stick frying pan over high heat. Cook half the prawns, turning, for 3 mins or until cooked through. Transfer to a plate. Repeat with remaining prawns.

Heat wholegrain tortillas. Divide prawns and slaw mixture among tortillas.

Top with remaining yoghurt. Fold tacos.
