Prawn tacos with apple slaw
8 individual, (8 x 40g)
99% fat-free plain Greek yoghurt
½ cup(s), (140g)
Green apple, unpeeled
1 medium, cored, cut into matchsticks
2 individual, thinly sliced
4 individual, trimmed, cut into matchsticks
½ cup(s), finely shredded
Reduced-salt taco seasoning mix
- Combine apple, celery, radishes and mint in a bowl. Add half the yoghurt. Combine and set aside.
- Combine green prawns and taco seasoning in a bowl. Heat olive oil in a non-stick frying pan over high heat. Cook half the prawns, turning, for 3 mins or until cooked through. Transfer to a plate. Repeat with remaining prawns.
- Heat wholegrain tortillas. Divide prawns and slaw mixture among tortillas.
- Top with remaining yoghurt. Fold tacos.
