Prawn, papaya and soba noodle salad
Paw paw or papaya
400 g, cut into 2 cm pieces
40 g, sliced
2 tbs, chopped
2 tbs, shredded
Dry soba noodles (100% buckwheat)
Raw peeled prawns
600 g, peeled, tails intact
2 clove(s), crushed
Fresh red chilli
1 tsp, finely chopped, seeded
⅓ cup(s), (80ml)
- Combine the papaya, onion, coriander and mint in a medium bowl.
- Cook the noodles following packet directions until just tender. Drain.
- Meanwhile, combine the oil, prawns, garlic, ginger and chilli in a bowl. Heat a wok over high heat. Stir-fry the prawn mixture, in 2 batches, for 2-3 minutes or until cooked. Return prawn mixture to the wok with half the lime juice and stir-fry for 1 minute or until heated through.
- Combine the prawn mixture, noodles, papaya mixture and remaining lime juice in a bowl to serve.
