Prawn, cucumber and watercress baguette

Enjoy a crusty bread roll, plump pink prawns and creamy mayo laced with lime and chilli.

Ingredients

Light whole egg mayonnaise

1½ tbs

Lime rind

½ tsp

Lime juice

2 tsp

Fresh red chilli

1 whole, deseeded, finely chopped

Baguette

200 g, split

Watercress

25 g

Lebanese cucumber

1 medium, cut into ribbons

Cooked peeled prawns

150 g, King variety

Instructions

  1. Combine mayonnaise, rind, juice and chilli in a small bowl. Season with salt and freshly ground black pepper.
  2. Place baguette bases on serving plates. Spread with half the mayonnaise mixture. Top with watercress, cucumber and prawns. Dollop with remaining mayonnaise mixture and sandwich with baguette tops. Serve.

Notes

Use a vegetable peeler to cut cucumber into thin ribbons.
