Light whole egg mayonnaise
Fresh red chilli
1 whole, deseeded, finely chopped
200 g, split
1 medium, cut into ribbons
Cooked king prawns
- Combine mayonnaise, rind, juice and chilli in a small bowl. Season with salt and freshly ground black pepper.
- Place baguette bases on serving plates. Spread with half the mayonnaise mixture. Top with watercress, cucumber and prawns. Dollop with remaining mayonnaise mixture and sandwich with baguette tops. Serve.
Use a vegetable peeler to cut cucumber into thin ribbons.
