A tasty wholemeal baguette provides a source of fibre. Teamed with the protein in prawns, this sanger really satisfies.

Ingredients

Avocado

½ medium, coarsley chopped

Dried chilli flakes

tsp, (pinch)

Lime juice

1 tbs

Wholemeal bread roll

240 g, (4x60g baguette pieces) split

Cos lettuce

4 cup(s), (1 whole baby cos) leaves separated

Fresh mint

1 tbs, (6 large leaves)

Lebanese cucumber

2 medium, cut into ribbons

Cooked peeled prawns

115 g, peeled, deveined

Fresh coriander

¼ cup(s), sprigs

Instructions

  1. Place avocado, chilli and lime juice in a small bowl and mash to combine. Season. Spread cut-side of baguette top with avocado mixture.
  2. Place baguette base on board. Top with lettuce, mint, cucumber, prawns and coriander. Sandwich with baguette top. Cut evenly into 4 portions.

Notes

TIP: Replace avocado mixture with 6 tbs store-bought light tzatziki.
