Pickled cucumber with herbs

Pickling is a great way to transform fresh vegies. All you need is some sugar, vinegar and a pinch of salt.
2 medium, thinly sliced
White wine vinegar
¼ cup(s), (small handful), lemon variety
- Thinly slice cucumbers. Place in a bowl with sugar, salt and white wine vinegar. Add thyme leaves. Leave to soften for at least 20 minutes before serving.
