Pesto chicken sandwich

No one can resist the mouth-watering combination of pesto and chicken. This sandwich will quickly become a lunchtime staple


Ingredients
Basil pesto
1 tbs
Light whole egg mayonnaise
2 tbs
Wholemeal sandwich thins
2 thin
Tomato(es)
1 medium, sliced
Carrot(s)
1 small, grated
Red capsicum
¼ small, sliced
Alfalfa sprouts
½ cup(s), (20g)
Cooked skinless chicken breast
120 g, shredded
Instructions

Combine pesto and mayonnaise in a small bowl. Split sandwich thins in half and spread 1 teaspoon pesto mayonnaise on each cut side. Stir 2 teaspoons hot water into pesto mayonnaise to thin down and reserve.

Fill sandwich thins with tomato, carrot, capsicum, sprouts and chicken. Drizzle with reserved pesto mayonnaise and serve.
