Pea and haloumi fritters

These super simple fritters will get the whole family's tick of approval. Whip them up for an easy Sunday dinner and serve with a quick toss salad


Ingredients
Egg(s)
2 medium, lightly beaten
Skim milk
⅓ cup(s), (80ml)
White self-raising flour
½ cup(s), (75g)
Polenta
½ cup(s)
Baking powder
¼ tsp
Frozen green peas
2 cup(s), thawed
Haloumi cheese
100 g, grated
Fresh mint
2 tbs, chopped
Olive oil
1 tbs
Tomato relish
⅓ cup(s), (80g)
Lemon(s)
1 medium, cut into wedges, to serve
Instructions

Combine eggs and milk in a large bowl. Fold in flour, polenta and baking powder. Stir in peas, haloumi and mint

Heat one-third of the oil in a large non-stick frying pan over medium heat. Spoon ¼-cup amounts of batter into pan. Cook fritters for 2–3 minutes each side or until golden and cooked through. Transfer to a plate and cover to keep warm. Repeat with remaining oil and batter to make 12 fritters.

Serve fritters with relish and lemon wedges.
