- Preheat oven to 160°C or 140°C fan-forced. Lightly grease four 23-cup (160ml) capacity ovenproof ramekins.
- Place eggs, yolks, sugar, milk and passionfruit pulp in a medium bowl, whisking until well combined. Divide mixture among ramekins, then place in a baking dish. Pour boiling water into dish to come half way up sides of ramekins, then bake for 20 minutes or until just set. Dust with icing sugar and serve baked custards warm.
TIP: You will need approximately 2 medium passionfruits to produce ¼ cup fresh pulp.
