Oysters with lemon, herb and garlic crumbs

Top your oysters with a homemade golden crumb of garlic, fresh herbs and lemon zest.


Ingredients
Oysters
8 individual
Dried breadcrumbs
35 g
Fresh lemon rind
2 tsp, finely grated
Garlic
1 clove(s), crushed
Olive oil
1 tbs
Fresh flat-leaf parsley
1 tbs, finely chopped
Fresh chives
1 tbs, finely chopped
Instructions

Preheat oven to 180°c. Line a large baking tray with baking paper. Place breadcrumbs, lemon rind, garlic and oil in a medium bowl. Toss to combine.

Spread the breadcrumb mixture on the prepared tray. Bake, stirring occasionally, for 10 minutes or until golden. Transfer to a bowl. Cool. Stir in the parsley and chives. Serve the remaining 8 oysters sprinkled with the breadcrumb mixture.
