Open melt-in-the-middle burgers

So much more than the average homemade burger! Bite into these juicy beef patties to reveal an oozy, melted mozzarella and semi-dried tomato centre. Everything can be prepped ahead so all you need to do is light up the barbie when your guests arrive.


Ingredients
Red onion
1 medium
Extra lean beef mince, raw
500 g
Dried oregano
2 tsp
Mozzarella
80 g, (1 x 80g piece)
Semi dried tomatoes, not in oil
50 g, chopped
Ciabatta roll
2 individual, (2 x 80g), split in half
Mixed salad leaves
2 cup(s), baby leaves, (60g)
Tomato(es)
1 large, thickly sliced
Oil spray
1 x 3 second spray(s)
Instructions

Thinly slice half the onion. Cover and set aside. Finely chop remaining onion. Place mince, chopped onion and oregano in a large bowl. Season with salt and pepper. Mix until well combined.

Divide mixture into 4 even portions. Shape portions into balls. Cut mozzarella into 4 even pieces. Press 1 mozzarella piece into the centre of each ball, top evenly with sundried tomatoes and mould mince mixture around the filling to enclose, then shape into 2cm-thick patties.

Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook patties for 6-8 minutes on each side, until just cooked through.

Meanwhile, lightly toast ciabatta. Top ciabatta halves with tomato, salad leaves, reserved sliced onion and burger patties. Serve with remaining salad leaves.
