Ingredients

Unsweetened oat milk

½ cup(s), (125ml)

Rolled oats, dry

75 g

Banana(s)

3 small, ripe, coarsely chopped (see tip)

Plain soy yoghurt, (up to 3% sugar)

¼ cup(s), (60g)

Fresh strawberries

200 g, quartered

Fresh raspberries

150 g

Fresh blueberries

150 g

Maple syrup

2 tsp

Instructions

  1. Process milk, oats and bananas in a food processor until smooth. Stand for 20 minutes.
  2. Preheat a waffle maker following directions. Pour in batter, being careful not to overfill – this mixture is enough to make 2 square waffles. Cook following your waffle maker instructions until waffles are golden and cooked through.
  3. Serve waffles topped with yoghurt, berries and a drizzle of maple syrup.

Notes

You will need 250g coarsely chopped banana for this recipe. You can also make these in a silicone waffle mould. Bake at 200°C for 10-12 minutes or until set.
