Noodle salad with shredded chicken

Take shredded chicken, carrot, snow peas, noodles, add a drizzle of sauce and dinners just about done.
Cooked soba noodles
180 g, shelf-fresh
200 g, sliced
2 medium, coarsley grated
Skinless chicken breast, grilled or barbecued
300 g, shredded
Reduced salt soy sauce
Sweet chilli sauce
- Cook noodles in a large saucepan of boiling water, following packet instructions, or until just tender. Add snow peas for last 30 seconds of cooking. Drain. Refresh under cold running water. Drain.
- Transfer noodles and snow peas to a large bowl. Add carrot, chicken, soy sauce and chilli sauce. Toss to combine. Serve.
SERVING SUGGESTION: Long fresh red chilli (finely chopped).
