Noodle salad with shredded chicken

Take shredded chicken, carrot, snow peas, noodles, add a drizzle of sauce and dinners just about done.


Ingredients
Cooked soba noodles
180 g, shelf-fresh
Snow peas
200 g, sliced
Carrot(s)
2 medium, coarsley grated
Cooked skinless chicken breast
300 g, shredded
Reduced salt soy sauce
2 tbs
Sweet chilli sauce
1 tbs
Instructions

Cook noodles in a large saucepan of boiling water, following packet instructions, or until just tender. Add snow peas for last 30 seconds of cooking. Drain. Refresh under cold running water. Drain.

Transfer noodles and snow peas to a large bowl. Add carrot, chicken, soy sauce and chilli sauce. Toss to combine. Serve.
