These peanut butter and oat energy bliss balls make a great healthy snack on the go.


Ingredients
Rolled oats, dry
75 g
Shredded or desiccated coconut
35 g
Dried cranberries
25 g, finely chopped
Hazelnuts
45 g, roasted, chopped
Smooth or crunchy peanut butter
60 g, smooth variety
Honey
75 g
Vanilla bean extract
½ tsp
Instructions

Combine oats, coconut, cranberries and hazelnuts in a large bowl.

Add peanut butter, honey and vanilla and stir until well combined (the mixture should be quite sticky).

Chill for 30 minutes, then roll mixture into 12 balls. Place on a plate and chill in fridge until ready to serve.
