Mushrooms with spinach, ham and cottage cheese

For a tasty, filling way to start the day, try this quick and easy mushroom and ham combo!

Ingredients

Swiss brown mushrooms

200 g, quartered

Garlic

1 clove(s), crushed

97% fat-free deli sliced ham

80 g, chopped

Baby spinach

2½ cup(s), (75g)

Balsamic vinegar

1 tsp

Soy and linseed bread

2 slice(s), (2x35g slices)

97% fat-free cottage cheese

¼ cup(s), (60g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Add mushrooms and cook, stirring, for 3–4 minutes or until tender and lightly browned. Add garlic and cook, stirring, for 10 seconds. Add ham and spinach and cook, stirring, for 2 minutes or until spinach has just wilted. Add vinegar and stir to combine. Season with sea salt and freshly ground black pepper.
  2. Meanwhile, toast bread and spread with cottage cheese. Serve topped with mushroom mixture.

Notes

TIP: You can use low-fat smooth ricotta cheese instead of cottage cheese.
