Banish boring mash from your table with this appetising alternative full of brightness, freshness and sweetness


Ingredients
Red skin potato
500 g, chopped
Frozen green peas
2 cup(s), (240g)
Skim milk
⅓ cup(s), (80ml), warmed
Fresh mint
⅓ cup(s), shredded, plus small leaves to serve
Instructions

Boil, steam or microwave potatoes and peas, separately, until tender. Drain. Place in a large bowl and mash until almost smooth.

Add milk and shredded mint leaves. Season with salt and freshly ground black pepper. Stir to combine. Serve topped with extra mint leaves.
