Soak your oats in grated apple and yoghurt for a smooth texture usually reserved for cafes. Nuts, dried fruit and fresh mint leaves add flavour and crunch

Ingredients

Rolled oats, dry

1 cup(s), (120g)

Currants

1 tbs

Skim milk

1½ cup(s), (375ml)

Green apple, unpeeled

2 medium, unpeeled, grated

Walnuts

¼ cup(s), (25g), coarsely chopped

Fruit flavoured yoghurt, 99% fat-free, no added sugar

150 g, (passionfruit)

Fresh mint

2 tbs, shredded

Instructions

  1. Combine oats, currants and milk in a medium bowl. Set aside for 30 minutes.
  2. Reserve 1⁄3 cup grated apple and a few walnuts for garnish. Fold remaining apple and walnuts into oat mixture.
  3. Spoon bircher muesli into serving bowls. Top with yoghurt, reserved apple and shredded mint. Sprinkle with reserved walnuts. Serve.

Notes

TIP: Sprinkle the grated apple with a little lemon juice to stop it going brown.
