Mint and apple bircher muesli

Soak your oats in grated apple and yoghurt for a smooth texture usually reserved for cafes. Nuts, dried fruit and fresh mint leaves add flavour and crunch
Dry rolled oats
1⅓ cup(s), (120g)
1½ cup(s), (375ml)
Green apple, unpeeled
2 medium, unpeeled, grated
¼ cup(s), (25g), coarsely chopped
No-fat fruit flavoured yoghurt
150 g, (passionfruit)
2 tbs, shredded
- Combine oats, currants and milk in a medium bowl. Set aside for 30 minutes.
- Reserve 1⁄3 cup grated apple and a few walnuts for garnish. Fold remaining apple and walnuts into oat mixture.
- Spoon bircher muesli into serving bowls. Top with yoghurt, reserved apple and shredded mint. Sprinkle with reserved walnuts. Serve.
TIP: Sprinkle the grated apple with a little lemon juice to stop it going brown.
