99% fat-free, plain or natural yoghurt, unsweetened
¼ cup(s), (60g)
Fresh flat-leaf parsley
1 tbs, finely chopped
Fresh oregano
2 tsp, finely chopped
Fresh lemon rind
¼ tsp, finely grated
Lemon juice
¾ tsp
Garlic
½ clove(s), crushed
Tuna, canned in springwater, drained
1 185g can, flaked
Rocket
2 cup(s), (60g)
Red capsicum
1 medium, finely chopped
Celery
2 stick(s), sticks, thinly sliced
Eschalot(s)
1 whole, finely chopped
Wholemeal bread
8 slice(s), (8 x 35g)
Instructions

Combine yoghurt, parsley, oregano, rind, juice and garlic in a large bowl. Season with salt and pepper. Add remaining ingredients and toss to combine.

Sandwich salad mixture between bread to make 4 sandwiches. Serve.
